Roasted corn salad!

So tonight we are having roasted corn salad, it's delightful!

4 ears corn, peeled
Bake in 375 degree oven for 25 minutes, turning periodically, then cool in the fridge.
2 cups green beans (haricot verts) chopped
1 bell pepper, diced
1/2 a large cucumber, diced
2/3 c parsley, roughly chopped
Juice of 1 lime
1c raw walnuts, chopped
2oz goat cheese

Once the corn has cooled enough so you can hold it, slice off the kernels and stick back in the fridge.
Mix the remaining ingredients together except the goat cheese & lime juice.
Dress the salad w the lime juice, mix thoroughly, then mix in the goat cheese.
Salt & pepper to taste. Enjoy!
